Compared to them, tempering by hand’s an arduous task and requires infinite patience in accurately maintaining specific temperatures.

There are artisan-chocolatiers who make handmade chocolates to cater to such discriminating customers and they use the tabliering technique to temper their confections. Moisture can spoil the final product and so you should keep all ingredients and cooking gear dry. The basic ingredient for tabliering is a pound chocolate (any type). You should also have a bread knife, a chopping board, a spatula, a mixing bowl, a double boiler, a thermometer capable of measuring until 82F and a cookie sheet. You should pat dry these paraphernalia with a paper towel.

Cut the chocolate into small strips. While you boil water with medium heat on a double boiler, if you keep the chocolate strips on the upper pan, the temperature should slowly rise to 108-115 degrees F to melt the strips. You must keep stirring it. Each type of chocolate melts at a different temperature. Mush or melted chocolate is transferred to a mixing bowl but you should not allow moisture to destroy your efforts at this point. Check if the chocolate flows smoothly and is not getting lumpy.

2/3 of this mush is worked upon on a marble slab and cooled to 80-82 degrees F by scraping, spreading and folding with the spatula. Temperature of the 1/3 of the remaining mush must continue to remain at 100 degrees F.

Both the portions of the mush are then mixed on the slab and worked till the whole chunk cools to 80-82 degrees F. Then reheating of this chunk is done. Temperatures to which reheating should be done for dark chocolates is 88-90 degrees F, for semi-sweet chocolates, 86-88 degrees and for white chocolates, 82-84 degrees. You can easily check by dipping your knife into the chocolate, let it dry for about 5 minutes, then see if the chocolate on the knife tip has acquired gloss and turns hard. Thus tempering is over and you can do dipping and molding.
If there is a lapse in maintaining temperatures, repeat tempering. The chocolate can stay in its tempered state longer if it’s set on a hot pad.
